Bunny Biscuits for Easter Brunch

If you’re new around here, I’m Amanda, and 2021 is my year of “extra”. Decorations for all the events, heart-shaped bacon for Valentine’s Day, St. Patrick’s Day pizza party, Easter Bunny blow up currently hanging out in my front yard kind of extra. So it should come as no surprise that I’m adding an over-the-top food item to my Easter Brunch menu. TO be honest, even though they look like it they really aren’t THAT over the top… just a little extra.

Bunny Biscuits and gravy go so perfectly with ham and my mom’s green beans or roasted brussel sprouts or even served with scrambled eggs and some fruit. Whatever you pair them with, they’re cute AND tasty AND super easy!

You’ll need:

  • 1-2 cans of biscuits, Pioneer Biscuit Mix, or your favorite biscuit recipe (each Bunny takes about a biscuit and a half if you’re using canned biscuits, so plan accordingly).
  • 1 pouch of Pioneer Sausage Gravy Mix

Bunny shaped biscuits and pioneer gravyFor this round, we’re going to assume you are using canned biscuits. Pioneer Biscuit Mix is also a favorite in our house.

  1. Preheat your oven according to your biscuit cooking instructions and separate the biscuits onto a cutting board.
  2. You can get 3-4 ears out of a biscuit if you don’t mind doing some shaping. Determine how many bunny bodies you’ll have and how many biscuits you need for ears. I used a can of 8 jumbo biscuits and made 5 bunnies (5 biscuits for bodies, 3 biscuits for ears/tails).
  3. Place your body biscuits on a baking tray, spread out enough that you have room to add the ears. Bunny shaped biscuits and pioneer gravy
  4. Cut the edges off a biscuit and shape to make ears. With the ‘wedge’ shape that is left, cut our two more ears or one ear and two tails. Pinch 2 ears onto each body. Bunny shaped biscuits and pioneer gravy
  5. Continue making ears and attaching them until all bodies have ears. Bunny shaped biscuits and pioneer gravy
  6. Roll leftover dough into tails about the size of a small marble (or smaller).
  7. Make an indention in the dough with your pointer finger at the spot you want the tail and press the tail into the indention. how to make Bunny shaped biscuits and pioneer gravy
  8. Bake! While Bunnies are baking, prepare the Pioneer Sausage Gravy according to the package instructions. Bunny shaped biscuits and pioneer gravy
  9. Serve warm from the oven smothered in gravy or self serve/family-style.

The ooh’s and ahh’s and delight of eating the bunny ears dunked in gravy are totally worth the extra few minutes it will take to assemble these. Not to mention the fact that because you’re using Pioneer’s Sausage Gravy, you’re saving an immense amount of time making gravy from scratch (and it tastes just as good)! Can I sing the praises of this gravy for a sec? It takes three steps to make, it’s delicious and it’s so easy to keep on hand.
