Simple Summer Recipe: Meatball Subs

On busy weeknights, my whole family enjoys this easy-to-prepare, comfort-food dinner. Serve with celery sticks and carrot sticks with a little Ranch dressing.

1 package hot dog buns

cooked meatballs (The Anderson family has tried a ton of different frozen meatballs, from Wal Mart’s Great Value Fully Cooked Italian Style Meatballs to Trader Joe’s Flame Broiled Turkey Meatballs and many in between. When it comes to frozen convenience, we think Rosina Frozen Meatballs are the best and they are widely available.)

1 jar marinara sauce or your favorite pasta sauce (We love Rao’s Marinara. It’s more expensive than most, but it’s worth it! A close second in our household is Central Market Marinara Sauce, which can be found at most H-E-Bs.)

1 package shredded mozzarella cheese

Directions

Place enough frozen or homemade cooked meatballs in a saucepan that will feed your family (aim for 4-5 meatballs per sandwich) and cover with pasta sauce. Gently fold the meatballs with the sauce. Heat the meatballs and sauce on low to medium heat, stirring occasionally, until the meatballs are thoroughly heated.

Meanwhile, pre-heat oven to 400 degrees. Line a baking sheet with foil.

Once the meatballs are heated through in the pan, fill a hot dog bun with as many meatballs as you can fit.

Top with more pasta sauce from the pan. Place filled buns close together on baking sheet. Top each sandwich with shredded mozzarella cheese. Bake until cheese is melted, hot and bubbly (about 5 minutes). Serve.
