Easy as Pie: Three Simple Pi Day Recipes

How many digits of Pi can you recite? I can do a whopping three: 3.14. Luckily, that’s all we need to celebrate Pi Day every March 14th. I’m clearly not a math whiz, but I do welcome any excuse to celebrate and eat something delicious.

Full disclosure, I’m also not naturally gifted when it comes to baking. Thank goodness for talented people who put their amazing recipes out there for the rest of us. Especially Jenn at Once Upon a Chef and Amy from A Red Spatula.  Because of them, I found three totally doable and totally tasty pie recipes. I promise with every non-culinary bone in my body that you can make these.  My biggest problem was not accounting for time that the pies needed to “set” in the fridge (such a rookie). When you check out the recipes using the links below, be sure to note such details and things should be smooth sailing. 

Coconut and Chocolate No-Bake Pie

This pie totally gets me–there’s chocolate, a store-bought crust (optional), and no baking. But don’t let it fool you. It’s delicious! Another great thing about this pie is that it actually sets a little better if you leave it in the fridge overnight. The perfect make-ahead dessert! If you want to impress people with as little work possible, this is your pie.

Key Lime Pie

Key Lime is my husband’s favorite! So I did go the extra mile and make my own graham cracker crust (we all do crazy things for love). To make things easier and faster, however, I recommend making it the night before you want to add the filling. If you want to do something completely homemade but not completely impossible, this pie is a great option.

Peach and Plumb Crumb Slab Pie

This is what my pie dreams are made of–a big old slab of peaches and brown sugar. The crumb topping is ridiculously easy, which is great news for those of us still intimidated by the lattice pie crust technique. Also, don’t tell anyone, but I totally used frozen peach slices. This pie will feed a village but thankfully it doesn’t take one to throw it together. 

Remember, your pie doesn’t have to be perfect. Lord knows my pie crusts won’t be winning any awards. But I’m convinced that with enough Cool Whip and good company, any pie tastes great. That’s what Pi Day is all about for me–the chance to pause the daily routine and make some memories. 

And chocolate. It’s always about chocolate.

Whitney
When Whitney fell in love with a handsome Texan, she just knew that someday they would call Texas home.
